Street Fighter, Final Fight, Soul Calibur, Mortal Kombat.

Best fighting game I think I have played so far though is Fight Night round 3.

If you have an import system I'd rather ya check out Victorious Boxers 2. it puts fight night to SHAME

Tekken 2 for 3d games, and probably humm Street Fighter 2 for 2d or Killer Instinct 2, cause it was neo porn for a wee teenage laddie i like was!
