EliteXC should have odds by Friday.

The biggest sportsbook sites generally wait until a few days before an MMA event to put it up. They want to make sure that every fight actually happens. Some even wait until the weigh ins are completed so they know there is a fight. Sportsbooks don't not like returning money for fights that never happen. The UFC is the exception, but even there, only the biggest fights are up until a few days before the event when they know.

As an example, no one listed the Goiveia-Lambert fight for UFC 76 yet. Its a good thing too, as its been scrapped. And Scott Junk has just today replaced Justin McCully on that 76 card that is just a week and a half away. Thus why the books wait to release odds on everything except the biggest matchs where the hope to get the most "action".
