Sure there are plenty of writers (aka story producers) on TUF. They get credits for it. And, in at least three issues of Script magazine they have interviewed Reality TV writers that have specifically stated that they wrote story lines for TUF. They take what they know about the fighters and coaches and they create scenarios and they put the cast in those situations.

Why do you think that they call the try-outs for TUF "casting calls"? It's because they want fighters with personalities and that will help create drama. Boring, dull people get turned away. They follow the cast around all day long and then edit the footage to fit their story line. It's pure Reality TV. I have studied them and have attended many lectures and symposiums on what Reality TV is on TV. There really is very little reality in Reality TV.
