The "I'm better than you so I can dictate this situation" refused to sign the ticket. This is cause for immediate arrest in most states. He refused to follow lawful commands to allow restraints to be applied for the arrest, and held his hand in his pocket while walking away from the officer and refusing to follow orders. Sure, the trooper could have fought with him in to traffic, but used the taser instead. Give the man a raise for doing his job. Sure, he could have been more friendly, but he's not out there to make buddies. Do what your told, fight the smart fight (if you were right anyway).
