Welcome, Jeremy. Ask anything. We'd rather you were honest about being new to the sport and eager to learn about it, than pretend you know everything and come off like a jerk. If you're only into UFC and K1 so far, you should really check out some Pride -- it's Japan's version of the UFC, fought in a ring instead of a cage, with slightly different rules and different round lengths. They have a bunch of really incredible fighters, and in particular I like their BUSHIDO division, which is only for lighter weight classes. Makes for a night of faster-paced, high energy fights.
