Man, I've been dealing with the exact same problem.
Kippered Herring is a good light calorie snack (150 calories) with 14g of protein. Good stuff, but not very filling or good tasting. I think a bowl of cereal is a good way to go. 350 calories, two food groups, and very healthy depending on the type of cereal, which for me is Vector is its high in almost everything you can expect from a cereal.
I like big sandwiches. Whole Wheat/Seven Gran/Flax bread. Mustard for condiment, no butter or mayo or anything. Tomato, lettuce, pickle, onions, lunch meat (22% protein or higher) or leftover chicken. No cheese.
I think you and I should look into Meal Replacements, like Milk N Oats and Protein Shakes.... any Meal Replacements anybody can reccommend?

i would say that if you're so hungry before bed that you eat a bunch of crap you should consider adding another meal to your day. the idea of not eating before bed is one of those recomendations made for people who are not inclined to hard workouts and are trying to lose weight by dieting alone. as we all know, dieting is only 50% of losing weight, workouts are the other 50%.
you should consider a meal that consists of high protien and low glycemic carbs as well as glass of water.

Myoplex is just a meal replacement shake, it comes in a powder form. you just add it to water or milk and shake it up, a blender works best though. they're not a weight gainer so they are not loaded with excess carbs. they are in fact a meal replacement, meant to replace or be an addition to your regular meals.

i have been very fond of Roast Beef sandwiches lately. i also eat alot of sardines, not so cheap but they are easy and go good with crackers. Tuna in the pouch is great, companies make alot of varieties with differant seasonings now so you have more options. however i always opt for the Tuna in sunflower oil. you get protein and good fats all at once. i try to eat oatmeal when i first wake up, with raisins, cinnamon and honey, about 3/4 of a cup dry is a good portion for me. i find that it gives me a great deal of energy to get going. when you plan meals its best to stick with the least processed options. but at the sametime don't look to avoid fats, you're body needs them to perform at an optimal level, especially if you train hard. too many people try to avoid all fat when in reality you should get about 20% of your calories from good fats.

thats ideal Jon but impractical for many. for those of us who can't do the two hour thing its best to divide the calories as best as possible. you can even get more specific and talk just vegetables. sure you want to eat veggies with every meal, but if thats not possible the solution is to eat as many as you can when you can. the main goal is to get all the calories you need in a day, spreading them out evenly is secondary. alot of these ideas come from bodybuilding and are designed for maximum muscle growth. you can do pretty well for yourself on the 3 meals a day plan if thats all you have time for.

Light cottage cheese. The protein that it contains, casein, gets absorbed slower than other kinds. So eat a cup of it before bed, and it feeds your muscles while you sleep -- a time when they normally go without protein and start to break down.

I follow the nutritional guide that the national program Ultimate Bodyshaping Course uses.
It's a great diet plan with dozens of good carbs, good fats etc. that you can eat that are fun to prepare and has at least 100 safe "snacks" you can eat without going to bed hungry.
It's what works for me.

you have the same problem i have, keeping eating interesting. if you're not into Sardines or Tuna you can try canned chicken breast. its not so bad, sodium could be an issue but its high in protein. you should consider hitting up the cooking section of a bookstore and just browse, get some ideas of what you can do with food to keep it interesting. you can do alot with pasta, you can make hot and cold dishes from it. i often make alot of pasta at one time and keep it in the fridge. usually i just pour sauce on it and eat some everyday until its gone. you could cook up some chicken and bread it, eating it with the pasta.

another possible place to look for options is bread, there are lots of types out there and most people always go the route of white or wheat. missing out on all of the other kinds. its amazing the differances new varieties of bread can make on old favorites.
