A lot of people have suggested some wonderfully compelling match-ups. Instead of repeating what others have suggested, he's some other potentially interesting bouts...

Anderson Silva vs. Matt Hughes (if Hughes beats Serra, and later GSP) - They could fight at MW or at a 177 lb catchweight.

Evan Tanner vs. Chris Leben - suggested in another thread, but I liked the idea a lot

Houston Alexander vs. Tito Ortiz - Could Houston beat Tito down like the others he's faced?

Roger Huerta vs. Joe Stevenson - Many people rightly suggested the #1 matchup of Penn/Sherk, but this secondary matchup would be interesting and finally show whether or not Huerta is overated.
